Ingredients
- Flour: Le 5 Stagioni
- Tomatoes: La Fiammante San Marzano
- Aqua: Mineral water
- Salt: Sale Marino fino di Sicilia
- Yeast: Fresh Yeast
- Topping: Fior di latte, basil
Method
- Disolve salt with room tempered water
- Disolve yeast and add ~5-10% flour
- Add the reast of the flour and mix 15 minutes in a mixer (or until dough feels ready)
- Rest 30 minutes
- Fold and rest 30 minutes * 3
- Rest 12 h
- Make balls, rest 12h
- Bake pizza in an oven with floor temp ~430°C and dome temp ~485°C
